Vegan Enchilada Casserole

Vegetarian Mexican Enchiladas


• 1 Can of Corn

• 1 Can of Black Beans

• Package of corn tortillas

• 1 bag of cheese or cheese sub

• 1 Can of enchilada sauce

• Beef or beef sub

• Taco seasoning


• Prepare meat or meat substitute with taco seasoning

• Preheat oven to 350

• Use medium sized glass dish (oven safe)

• Start with a layer of tortillas

• Top with sauce

• Layer with black beans and corn

• Top with meat

• Top with cheese

• Then repeat series of layers until the

dish is full

• Top with cheese

• Heat in oven for 25 minutes
